Pimenta dioica

Origin: Central America, Greater Antilles and Southern Mexico.

Flavour: A combination of cinnamon, nutmeg and clove.

Uses: Jamaican cuisine, Caribbean cuisine, Mexican cuisine and Middle Eastern cuisine.

Dishes: Jerk chicken, jerk pork, curry (Jamaican), Mexican honey spice cake (Rosca de miel y especias), Fasulia or Fasolia (Cooked beans stew with tomato sauce–Middle Eastern) *can be made with meat for example, beef, lamb.

Compliments: Bay leaf, cardamom, cinnamon, clove, coriander seed, cumin, fennel, garlic, ginger, juniper, mustard seed, paprika, turmeric.

Substitutes for Allspice/Pimento: Cinnamon, nutmeg, clove, mace.
