Mocha Date Bites

Description

This Mocha Date Bite recipe is healthy and delicious. It includes mixed nut butter, warm spices, the sweetness of dates and other wholesome ingredients.


Ingredients

  • 16 dates
  • 1 1/4 cups(89-111.25 g) oats
  • 1 tablespoon flax seed ground or whole
  • 1 tablespoon chia seed
  • 2 tablespoon unsweetened cocoa powder
  • 1/8 teaspoon salt
  • 1 tablespoon hemp hearts *optional
  • 1/4 teaspoon ground or freshly grated nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup mini chocolate chips
  • 12 tablespoons brown sugar or coconut sugar (light or dark)
  • 2 tablespoons instant decaffeinated coffee powder
  • 1/4 teaspoon water to dissolve the coffee powder
  • 1/2 cup almond or hazelnut butter or 1/4 cup almond butter and 1/4 cup hazelnut butter or 1/2 cup nut butter variety that you like.
  • 1 teaspoon vanilla extract
  • 1 tablespoon olive oil
  • 1 tablespoon water for dates or 1/2 cup water *please refer to the instructions list if you are not using a food processor.

Instructions

If you are not using a food processor for this recipe:

  1. Remove the pit of the dates and tear in half. Chop or slice the dates and put them in a medium bowl. If you prefer more texture in your date bites, roughly chop the dates. If you would like a smoother consistency and texture, slice the dates. Set aside.

  2. Next, pour a 1/2 cup of water on the dates and let them sit for 5–10 minutes while you get the dry ingredients ready. Stir the dates and let them sit for another 5 minutes.
    *Please do not get rid of the bowl that the dates were soaking in. You will need it to mix the dates, mixed nut butter, brown sugar, decaffeinated instant coffee and olive oil before adding it to the bowl with the dry ingredients. 
    *If you have a whole nutmeg that you can freshly grate for this recipe and any other recipes it will provide the best flavour. It is not a necessary step and I do not always have time for this extra step however if you do and want to add another flavour note to the recipe then please try this simple step. I think you will be happy with the results.
  3. Then add the dry ingredients and mini chocolate chips (if using) to a large bowl and stir until well combined.

  4. Then strain the dates and remove as much liquid as possible. Gently squeeze the dates to get any excess water out.

  5. Next, put the chopped or sliced dates back into the bowl that they were soaking in. To that add the mixed nut butter, sugar, vanilla and coffee mixture and olive oil.

  6. Stir until well combined.
  7. Next, add the date mixture to a large bowl with the dry ingredients. Gently chop and fold until the mixture is well combined. About 5 minutes. The mixture is ready to roll into balls. Use a soup or tablespoon to form the balls.

If you are using a food processor for this recipe:

  1. Remove the pit and tear the date in half. Place the dates in a medium size bowl. Set aside

  2. Next, measure the dry ingredients and place them in the food processor. Pulse and blend until the mixture is well combined.
  3. Then grab a large bowl that will be able to hold the wet and dry ingredients. Place the processed ingredients in and set aside.
  4. In a small bowl, put 2 tablespoons of instant decaffeinated coffee along with ¼ teaspoon of water and stir until the coffee granules are dissolved.
  5. Then add the vanilla extract and sugar to the bowl with the dissolved coffee and stir until combined.
  6. Set aside.

  7. Next, add the dates, mixed nut butter and coffee mixture to the food processor.
  8. Then pulse and blend until well combined.

  9. Put the mixture into a large bowl.
  10. Add the mini chocolate chips if using.
  11. Then stir and combine the mixture by doing a gentle chopping with a spoon or spatula in a folding motion until everything is evenly combined. These are the spatulas that I use for kitchen tasks like this one.

  12. Finally, the mixture is ready to roll into balls.

Notes

If you find that the date mixture is too wet and or sticky you can add up to ¼ cup of oats to the mixture. Add 1 tablespoon of oats at a time until you have reached the texture that you want. Mix thoroughly before adding the next tablespoon of oats.

Q: Can I use regular coffee instead of decaf?
A: Absolutely. The reason why I chose to use decaffeinated coffee is because more individuals can consume decaf without the side effects that can be associated with caffeinated coffee.
