Maple Spice Bites with Baked Apples

Description

I used to wait patiently for the maple season to arrive because I knew that our class would be going on a school trip to the maple farm to see how maple syrup is made. The best part of the trip was making maple taffy in the snow. Yum! I have tried to recreate this fond memory in these spice bites with maple syrup and baked apples.


Ingredients

  • 23 medium sized apples or if you are pressed for time, a 1/2 bag of Bare apple chips-total of 2 cups.

  • 23 tablespoons maple syrup
  • 1/2 cup dried apricots or approximately 11 whole dried apricots
  • 2 tablespoons water
  • 1/2 cup almond flour
  • 1/2 cup oats
  • 1 tablespoon white chia seeds *if you do not have white chia seeds, use what you have. I use white chia seeds in this recipe for colour. Using a mix or black will not change the flavour, texture or consistency.
  • 1 tablespoon hemp hearts
  • 1 teaspoon apple pie spice, store bought or homemade
  • pinch of salt
  • 1/3 cup cashew butter
  • caramel chips *optional

Instructions

*If you are using pre–made apple chips, skip to step 7 on the instructions list.

  1. Line two baking trays with parchment paper, set aside. Line a freezer friendly container with parchment paper and set aside.
  2. Preheat the oven to 275 degrees Fahrenheit.
  3. Wash and slice apples by hand or with a mandoline and place on the prepared baking trays.

  4. Measure 2–3 tablespoons of maple syrup and put it in a small bowl. Spoon maple syrup over the apple slices.
  5. Put the baking trays in the oven on the middle and lower racks and bake for 60 minutes. After 60 minutes, switch the trays. The tray that was on the bottom rack goes onto the middle rack and the baking tray that was on the middle rack goes on the lower rack and bake for another 30 to 40 minutes until the apples are golden and dehydrated.
  6. Remove the apples from the oven and immediately take them off the trays and put them on a cooling rack. If you let the apples sit on the tray for too long they will stick to the tray. 
  7. Measure and chop dried apricots, place them in a small bowl and pour over 2 tablespoons of water. Set aside.
  8. Measure the dry ingredients and place them in the food processor. Pulse then mix until everything is blended and well combined. Remove the dry ingredients and place in a large bowl. Set aside.

  9. Measure apples if using pre baked apples then put them in the food processor or put the apples from the cooling into the food processor. Pulse then blend until the apples are partially broken and are about the size of medium peas. Place in a bowl and set aside.
  10. Put dried apricots in the food processor. Pulse and blend until the apricots are the size of small peas. Add the blended apples back to the processor and blend until combined.

  11. Add the dry ingredients to the food processor. Pulse then blend until the mixture is fully combined.

  12.  Add the cashew butter to the food processor and pulse then blend the mixture until it is completely combined. About 2 minutes.
  13. Roll the mixture into balls and place them in the prepared freezer friendly container. Layer with parchment paper if needed. Place in the fridge for up to two weeks or in the freezer for up to two months.

Notes

Q: What substitutes for the nut butter can I make?
A: Use any nut butter that you like. Peanut, almond, sesame (tahini).

Q: What if I don’t have time to bake apple slices?
A: Use premade apple chips. Just follow the recipe as per the instructions for the substitute.

Q: Can I use more maple syrup in this recipe?
A: Yes, just remember that by adding more than the recommended amount may change the texture of the bites. Also try using maple sugar if you have some on hand.
