Healthy Date Bites with Tahini and Coconut

What you’ll need to make this recipe

  • Medjool dates
  • Oats
  • Chia seeds
  • Whole or ground flax seeds
  • Sea salt
  • Unsweetened cocoa *I prefer to use Dutch Processed Cocoa in this recipe.
  • Sweetened desiccated coconut or coconut sugar *see notes
  • My favourite ground cinnamon
  • Ground hemp hearts
  • Mini chocolate chips

Fun Fact

Dates/ Date Palm

Dates from the Date Palm seemingly have originated from what is now Iraq. Fossil records show that they have existed for at least fifty billion years. Deglet Noor and Medjool Dates are the main varieties that are cultivated and consumed around the world.

Medjool are the preferred date based on their size and sweetness and long shelf life. All varieties of dates are also considered fresh fruit which is why you will find them close to the produce section in the grocery store.

Deglet Noor dates are a semi–dry variety. Dates are also regarded to be one of the oldest cultivated fruits in the world. The scientific name for the Date Palm is Phoenix Dactylifera and they can grow to a height of 23 metres or 75 feet tall. They continue to be a food staple in the Middle East and North Africa and have gained popularity all over the world due to their nutritional benefits. For example, they are a good source of fibre and a natural sweetener. Harvested dates are used for a diverse amount of culinary products such as vinegar, liquor, syrup and a host of non–culinary products such as furniture, baskets and fuel.

Healthy, delicious and filling. These no–bake Date Bites with sweetened coconut and chocolate chips will satisfy your sweet cravings without sacrificing flavour and they are gluten–free. 


Ingredients

  • 16 dates
  • 1 cup oats
  • 1 tablespoon chia seeds
  • 1 tablespoon flax seed *ground or whole
  • 1/8 teaspoon sea salt
  • 1 tablespoon unsweetened cocoa. I prefer to use Dutch Processed Cocoa in this recipe
  • 1 tablespoon -1/4 cup mini chocolate chips *optional
  • 3 teaspoons sweetened desiccated coconut or 1 tablespoon coconut sugar *optional
  • 1 tablespoon hemp hearts *optional
  • 1/41/2 teaspoon ground cinnamon *optional
  • 1/2 cup tahini
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon olive oil

Instructions

  1. Remove the pit from the dates.
  2. If you do not have a food processor you will need to chop and soak the dates then place them in a small bowl ½ cup of  water for 10 minutes.
  3. Get a large bowl and add the dry ingredients. Oats, chia seeds, flax seeds, cocoa, sea salt, cinnamon if using, hemp hearts, desiccated coconut or coconut sugar. Mix until well combined and set aside.
  4. Pat the dates dry with a paper towel or press through a strainer to remove as much moisture as possible.

    The first time that I made these Date Bites I did not get rid of enough moisture and they turned out to be sticky, wet. I would say they looked like round globs. I couldn’t even call them bites or balls. I ended up putting them in the oven for over an hour to dehydrate them so that they were edible. With that said they had a really nice crust around them that was good. So if you end up not getting enough moisture out from the dates you can always put them in the oven at 250 degrees Fahrenheit (120 degrees Celsius) for about 40 to 60 minutes or until they have a thin dry outer layer around them. You could also leave them rolled in balls uncovered on the kitchen counter on a baking sheet with parchment paper until they have dried out. That method will likely take a few hours depending on how much moisture is in your home.
  5. Place the strained chopped/ mashed dates in a medium bowl.
  6. Add the tahini, vanilla extract and olive oil then stir until well combined. Add the date mixture to the large bowl with the dry ingredients then start with a gentle chopping and folding motion until the ingredients are fully combined.
  7. If you are using a food processor, pit the dates then put them in a food processor and sprinkle 1 tablespoon of water over them. Pulse a few times then blend until the mixture comes together in a ball. About 30 seconds.

  8. With the processor off, sprinkle the blended dates with 1 tablespoon of olive oil and process until the mixture is combined. About 1 minute.
  9. At this point you have two options. You can either take the dates out of the food processor and mix it by hand with the dry ingredients, or you can add the dry ingredients to the food processor with the dates and combine everything then put the mixture in a large bowl for about 2 minutes.
  10. Add the chocolate chips and gently chop and fold until the mixture is fully combined.
  11. Start rolling the bites into balls. The advantage to adding the olive oil is that it makes it easier when rolling the bites and it’s healthy. The mixture is less sticky in your hands when it rolls into rolling balls.

  12. If you are mixing the ingredients by hand you will need a sturdy spatula. This is the one that I use and it provides enough flexibility to hug the corners of the bowl yet being strong enough to mix all of the ingredients thoroughly.*I would like to have a link to the affiliate program for the spatula that I use here.
  13. Start with a small chopping motion to get the wet and dry ingredients incorporated. Then gently fold and press the ingredients in the bowl and start with the small chopping motion again. This method should eliminate your stirring the mixture and possibly end up with half of it on the counter and the floor.

  14. Check if the mixture is ready to roll into balls by pressing the mixture with the spatula or you can try to form a ball by pressing some of the mixture in your hands. If it doesn’t stick together, you can either mix it some more or add 1 teaspoon of water and then continue chopping and folding until it is fully combined and ready to make the date bites. It is very important to mix the ingredients thoroughly so that all the ingredients are evenly distributed.

  15. Roll the bites into balls. Press the mixture together to form a ball rather than rolling them. By doing this you allow the ingredients to come together instead of crumbling. Take a soup spoon or tablespoon and scoop some of the mixture then start pressing it together then gently use your fingertips to form them into balls.

  16. The bites can be stored covered in the fridge for up to 10 days or in a freezer–friendly container with layers of parchment paper for up to 3 months.

Q: Does this recipe work well with additions or substitutions?
A: These date bites work well with add-ins or substitutions. I have provided a list of ingredients below that you may like to try out with this recipe.

Q: Is there a difference between sweetened and unsweetened coconut?
A: Yes there is. The unsweetened coconut is usually drier in texture whereas the sweetened coconut is moister. I add sweetened coconut to recipes where I want to maintain a moist texture. Another benefit of using sweetened coconut is that you can reduce the amount of sugar in a sweet recipe because sugar is already included.
